– Summer cocktails –

3 x NO ALCOHOL

Summer in your bones? Looking forward to the moment of shutting your laptop and running to find the best place on a terrace? And then it’s eleven ‘o clock again and you’re wobbling home on your bike. With a bit of a heavy head the next day? Now it’s not that bad and is part of that summer feeling. And hey, how often do we have days like these in Holland?

You don’t have to drink alcohol though, and you’ll probably feel better the next day. I’m giving you three party-worthy virgin cocktail recipes. If you’re not impressed, go on and throw some vodka in.

Summer Melon

This is what you need for 2 glasses:

– A quarter melon

– Mineral water

– Ice blocks

– Pear juice (eco pear juice is the best)

– 1 tablespoon of runny honey

– Juice of half a lemon

Peel the melon and take the seeds out. Put the melon and lemon juice in a blender and add a few generous helpings of (chilled) water. After blending, pour the drink over ice. Add a little pear juice and bit of honey. Stir well. If you have any melon over, you can use it as garnish or add a sprig of mint in the glass.

Virgin mojito

This is necessary for 4 glasses:

–       One sprig of mint

–       2 limes

–       4 teaspoons of brown sugar

–       Crushed ice (you can bash some ice in a tea towel)

–       Ginger ale

Place around 6 mint leaves in a glass with 2 wedges of lime. Crush everything really fine with a mudler (or the back of a wooden spoon). Add a mountain of crushed ice and top off with Ginger Ale. Stir well and do the taste test. If it’s not sweet enough, add a little more sugar.

Mint & Apple juice

You need this for a large carafe:

– 1 small sprig of mint

– 1 lemon, in slices

– Ice blocks

– 750ml bottle of carbonated apple juice

– Brown sugar (optional)

Super easy. Fill up a large carafe with ice blocks. Throw the apple juice in with the slices of lemon and mint. Your’e done. Even tastier when left in the fridge for a while, nice and chilled. You could add some extra mint leaves as garnish. Need it a little sweeter, add some brown sugar.
