Happy & Healthy sunday
I enjoy drinks and snacks on a Sunday the most. Maybe because everyone needs to go back to work the next day so we all enjoy our last few free hours that extra bit.
Dried sausage, cheese biscuits or a crostini with ham and truffle mayo (one of my favourites) are all heavenly but not so good for the figure. On the other hand: merely nibbling on a crudité seems so boring. Now today is officially the first day of autumn so no more beach days in Holland, but that does not mean that we should let our killerrr-bodies go to pot. I’m going to treat you to a few healthy snacks and drinks. No gnawing on green shoots, don’t worry. Man and woman will be happy with these snacks, believe me. Just take care with the amount of wine okay!
Healthy snacks
Date and walnut
Buy fresh dates and remove the pits.
Roast some walnuts in a dry pan and pop them into the place where the pit came out. Super simple, super healthy.
Bit of chicory
Remove the leaves from a chicory and lay them out like little boats. Fill them up with roasted walnuts, a piece of juicy ripe pear and a little slice of blue cheese.
Kale on bread
Bring water and three cloves of garlic to the boil. Throw three handfuls of kale or green cabbage in to the water. Boil shortly until the leaves are soft. Pour into a colander and let them cool down. Toast a piece of spelt bread. Drizzle some olive oil over it and rub a piece of raw garlic over the bread.
Squeeze the water from the cabbage or kale, add salt and pepper to taste and chop it into small pieces. Layer over the toast and finish off with a squeeze of lemon and a drop of olive oil.
Figs with goats cheese and honey from the oven
Preheat the oven to 200 degrees.
Cut the top of every fig off, but make sure they stay whole. Fold them open slightly and crumble some goats cheese over them. A drop of honey and a little thyme if you like it. Place them in an oven dish and roast them for eight minutes. Leave a little longer if the cheese is not yet melted.
Simple frittata
Whisk 6 eggs in a bowl, add salt, pepper and all the fresh green herbs you have in house. Add some grated Parmesan cheese or other left over cheese. Melt some (odourless) coconut oil or olive oil in a pan and heat well. Pour the mixture in and lower the heat. Let it cook slowly until firm. Leave it to cool and then cut into wedges.

Bloody Mary
What do you need and how do you make it?
– Tomato juice (2,5 parts)
– Vodka (1 part)
– Worcestershire saus
– Lemon juice
– Tabasco
– A stick of celery
– Black pepper
1 part = 30 ml
Use a tall glass or a large whiskey tumbler. Fill the glass with ice, vodka and a few drops of Worcestershire sauce and tabasco. Mix well together with a long spoon. Add the tomato juice till full. Squeeze lemon juice in and a little black pepper. Stir again and decorate with a stick of celery.
Home Made Ice tea
This drink is alcohol-free. Boil a litre of water and allow 4 mint tea bags to seep for at least half an hour. Chill well in the fridge. When cold, add a little ginger syrup, slices of lemon, fresh mint and ice.
