It has probably come to your attention that I like healthy food. Don’t get me wrong, you can make me very happy with a glass of wine, cheese board, fresh baguette or a sticky toffee cake. I indulge, but then compensate with a healthy day. Yes really, because otherwise I be a ten-tonner. I (sadly) have to make an effort. Besides that, my mind and energy levels are much better on healthy food. It’s not boring either. Seriously.
Take a look at these healthy desserts. Shove it under your boy’s nose sometime without telling him that it is totally sugarless or healthy (many men still turn their noses up). He’ll be converted. Also a good idea to keep a check on his six-pack right?
Raspberry ice-cream with Basil
Ingredients and method:
- 1 box of raspberries (frozen, so stick them in the freezer overnight)
- 1 banana (not frozen)
- A large bunch of Basil
- A little water
- Agave syrup (optional)
Mix all these ingredients together in a blender. Add agave syrup to taste. Let the mixture set for around 1 hour in the freezer. Stir well before serving.
Even yummier with a little dollop of greek yogurt or crème fraîche.
Coconut ice-cream
Ingredients and method:
- 2 tins of coconut milk (I buy mine in the bio store)
- 1 vanilla pod
- 4 tbsp of raw honey
Pour the coconut milk into a large container and freeze it overnight (check that the container fits). It will be frozen solid the next day so leave it out for a few minutes before using. Scrape it all into a blender. Add the inside of the vanilla pod (scraping it out, you know) and the raw honey. Blend well. It should now be one smooth mass. Pour it back in the container and freeze for a further hour. You’ll have delicious ice-cream when you take it out. And healthy.
How about adding a piece of sugar-free almond and pear tart? Here it is…
Sugar-free almond and pear tart
This recipe is from one of my favourite food blogs – Yellow Lemon Tree. I can honestly tell you, this tart is the bomb. Click here for the recipe.
Water lollies
There are endless variations. Make sure that you have some of those lolly moulds in house. You can buy them at a home store like Hema or Blokker.
Place some fresh fruit at the bottom of the mould. Strawberries, blueberries or raspberries are examples. Flatten them slightly.
Make up some squash from a healthy concentrate or cordial (sugar-free from the bio store) and fill up the moulds. You could even add a sprig of mint.
Or put watermelon through the blender with a tiny drop of agave syrup. Use that in the moulds. Overnight in the freezer and they’re ready to eat.
Coconut and date balls
Ingredients and method:
- 200 grams large soft dates (I usually buy mine at the market in a cardboard box)
- 150 grams of mixed raw nuts
- 1 tbsp of chia seeds
- 1 tbsp of raw cocoa
- 50 ml of coconut oil
- Shredded coconut
These balls are wonderfully sweet, due to the dates. Good sugars!
This recipe is quick and easy. De-pit the dates and add all ingredients (except the shredded coconut) to a blender, mixing till a smooth mass. Roll little balls (about the size of large marbles). Sprinkle the shredded coconut out on to a flat tray or plate and roll the balls in it. They will become less sticky and easier to handle. You can keep them in the freezer for a few days, but they probably won’t be around that long.
