I have a guest today. Lisette Kreischer, expert on all things green, responsible living and enjoying. Now that’s my kind of girl. Her new book recently came out, it is called PlantPower and has 96 green recipes for more balance in your life. This book is my new guide. So many delicious and inspiring things. And all vegetarian, so loads of vegetables and fruit.
This Beauty Berry Booze shake is one of the super smoothies from her book. You’ll have to do some grocery shopping first, but all the ingredients can be used in many of the other recipes and shakes.
Blueberries are full of antioxidants, vitamin C and E, iron and plenty more. They support the digestive system and the anthocyanin, the substance responsible for the blue colour, has a firming effect on the skin. So this beauty shake is a healthy start to the summer. Take note: the oats need to soak overnight.
Ingredients
- 75 grams blueberries
- 40 grams oats
- ½ tbsp goji berries
- 1 tsp vanilla powder
- ½ tbsp lemon juice
- ½ tbsp sunflower seeds
- 1 banana
- ½ tsp rice syrup
- drop more vanilla powder
- 50 ml water
- 1 tsp chia seeds
Place the oats, goji berries, sunflower seeds, vanilla and lemon juice in a bowl, cover with water and soak overnight. The next morning, steep the chia seeds in a bit of water for about ten minutes. Blend the banana, blueberries, rice syrup, vanilla, soaked mixture, water and chia seeds together at high speed till it’s a wonderfully thick smoothie consistency.
Options
- Replace the blueberries with strawberries, forest fruits or blackberries, or add these to make a mega healthy shake.
- If you use chia seeds, leave the smoothie to stand for a while and you’ll end up with a pudding.
- Use coconut sugar instead of rice syrup.
