And you only need one pan


Yesterday I was on the phone with Liesbeth:
“ Yes and I was at this great meeting where they gave me a delicious Tony (you know who) chocolate bar. Finished it though.”
“ That was your supper huh?”
“ Haha guess so.”

Nothing wrong with that but still my hands started itching. So especially for you Liesbeth three recipes that can all be prepared using only one pan. Easy Peasy. Even you can do this.

Vegetable omelet

Simple it just involves a lot of cutting. Buy vegetables you like and can use in an omelet. courgette, spinach, peppers (stuff like that). Sauté an onion, add the cut up vegetables and cook for a few minutes then add 3 whisked eggs. Put the lid on, turn down the heat and leave it for around 8 minutes or until the omelet is cooked. Done. Tastes great with grated cheese and don’t forget the salt and pepper.

Salmon with spinach

Add some olive oil or coconut oil to a frying pan and heat it up. Place the moat of salmon in the hot oil. Wait a little then quickly add the spinach. Don’t cook it for too long, just until done. Salt and pepper and you’re finished. Once on the plate you can add a splash of olive oil or some roasted pine nuts (but you’ll need an extra pan for that).

Cheese fondue

I am against cooking packed meals but there is a good ready to use cheese fondue available in the supermarkets with Swiss Ementhaler cheese. All you have to do is melt it. Cut some bread and vegetables to dip in and you can have dinner ready in ten minutes. Brilliant.

Then there’s my grandmother’s version. We mail each other every day to discuss all sorts of things but it’s mainly about food. Her answer to a one-pan meal was the following recipe:

Stir-up

Sauté an onion in oil

Add small pieces of potato

Leeks in large pieces

Tomatoes without their skins

Handful of string beans and some mushrooms

Pepper, salt some mushroom soup stock (cube) and finish off with some parsley.

“Will that help you Jet?”

It certainly does. But I know it will taste much better if my grandmother makes it for me.
