WHAT TO FILL WITH YOUR COOL BOX WITH

for a day at the park

I couldn’t be happier that the sun is now back. Give me a few friends, a park and I’ll take care of the cool box full of goodies. You know me, always trying to think outside the box before packing the (cool) box. I will share my favorites with you.

– Make sandwiches wrapped in silver foil. It keeps the sandwich very fresh and the foil wrapping then doubles as a plate.
Sandwich Ideas:

  • Cream cheese with cucumber slices. Add a little pepper and salt.
  • Avocado and smoked chicken
  • Mackerel with lashings of mayo

– Home cooked (buckwheat) pancakes, which are in fact also very tasty when eaten cold. When you unpack them you can pour a bit of agave syrup on them or they are also delicious with goats cheese crumbled over them.

– The same goes for chicken legs, which you can easily prepare at home and serve cold. Nothing is tastier.

– Watermelon. Always a good idea.

– A boiled egg or two. Very easily carry and always yummy and you can eat them straight from your hand.

– A cold bottle of rosé, which seems logical.
Tip! Fellow editor Liesbeth and I have a special trick to get cold wine in no time: wrap the bottle in toilet paper. Wet the paper completely and then put it in the freezer for 10 minutes. It is then icy cold. If you put the bottle straight into the cool box; leave it in the frozen paper, then it keeps its coldness for longer.

Don’t forget a roll of kitchen paper or wet wipes; always handy to keep your hands nice and clean. Remember to keep everything in the refrigerator for as long as possible before packing the cool box.
