tasty, fun and easy
GAZPACHO’S
Making soup doesn’t have to be hard. Especially when you’re making Gazpacho. All you need is a good blender and some fresh products. No need to use the stove, because as you know, gazpacho is served cold. Easy peasy lemon squeezy. I’ve got three gazpacho recipes here for you which taste like you’ve been slaving away in the kitchen for hours. Any easy dish to make when you’re having a group of friends over and you want to be very chic and serve a starter. Easy way to score some bonus points.
TOMato Gazpacho
For four people
500 grams of canned peeled tomatoes
1 red paprika
1 garlic bulb (or more if you’d like)
1 cucumber
A few drops of Tabasco
4 table spoons of (good!) olive oil
2 table spoons of wine vinegar
1 red union
salt and pepper
optional: half a red pepper
Wash (except for the tomatoes of course) and peel everything (yes, even the cucumber) and slice them into pieces and put them in the blender. Add the tomatoes, the wine vinegar, olive oil, salt and pepper. And blend again. Have a little nib to see if it can use an extra bit of salt or pepper. Or perhaps you want to make it a bit sweeter, then you can add a bit of sugar. Another option is to add a little bit of red pepper.
Add a few slices of cucumber and some roasted bread as a side dish.
cucumber Gazpacho
Alright, all you need for this one is a water boiler for the broth.
For four people
2 peeled and sliced cucumbers
1 sliced up union (size doesn’t matter cause you’re throwing it in the blender anyway)
1 garlic bulb
1 liter of vegetable broth
salt and pepper
Really simple: throw everything in a blender and you’re done. Let it cool off and it’s ready to go!
If you want to, you can add some slices of smoked salmon.
avocado Gazpacho
For four people
2 cucumbers
2 (ripe) avocado’s
1 red union
1 garlic bulb
2 table spoons of white wine vinegar
3 table spoons of olive oil
salt and pepper
optional: a red pepper
optional: a sprinkle of coriander
So the same game plan for this dish: wash and peel everything and throw it in the blender. Mix it until you’ve got yourself a smooth liquid mass.
