mother’s day breakfast ideas that will score you points
with your mother
I have the sweetest mother in the whole wide world. But then again, you probably do too. Do you feel a little guilty about not spending enough time with her? Well we’re going to make up for that big-time. No excuses, I really don’t care if your mom lives miles away. Cancel all your appointments and get on that train to surprise her with a special breakfast. Next Sunday is Mother’s Day. Buy her a stack of magazines so she’ll stay in bed reading while you muddle about in the kitchen. I have some great ideas that you can serve for breakfast. A smoothie a day keeps the doctor away. Get started with fresh veggies and fruits and add superfoods with anti-aging qualities. She won’t be offended. All you’re doing is helping her stay the way she is. Well, that’s what you tell her.
this is in it:
- Half an avocado.
- A generous helping of coconut milk: helps against inflammation, impurities, acne and other skin problems.
- Two teaspoons of hemp seed: for smooth healthy skin.
- Two tablespoons of goji-berries: they say these berries will give you eternal youth. What a gift!
- A handful of blueberries: lots of antioxidants, good for heart and arteries.
- Half a banana: yep, good for bowel movement.
- Ice cubes.
Put everything in the blender and serve directly. There’s probably enough in there to fill your own glass.
Homemade granola with fresh red fruits and a dollop of quark. My mum loves it. It also shows you put some work in, scores you extra brownie points. Here we’ll tell you how it’s done.
Toast a slice of bread and cut a circle (or heart) in the center. Heat some olive oil or coconut oil in the pan. Put the toast into the pan and break an egg in the center. It may be a little tricky and can go wrong. But it looks great if you pull it off.
It might take some getting used to for mum but it keeps her in check, chia pudding is hot. This recipe by Rens Kroes is easy and delicious. Make it the night before so you can sleep in the next morning.
The strawberries are sweet and juicy this time of year. Buy them at your green grocers and they’ll taste even better. Spread a biscuit bun or rusk with butter (if she likes butter) then arrange slices of fresh strawberry on top. To make it look like a little cake sprinkle on some course or fine sugar.
