6 Tasty rice waffle toppings

‘So ladies, making your delicious styrofoam waffles again are we?’ is something we hear a little too often from the guys at the lunch table. ‘Yes boys, yes we are.’ Meanwhile they are lathering peanut butter and Nutella onto their slices of white bread. Now we never bring that up now do we? Anyway, pimping up our rice cracker just so happens to be something we actually enjoy and look forward to. Particularly on the days when the table is set with boiled eggs or fresh salmon from the the fish market. The bigger the pile, the better. The art of elegantly eating these topped up towers is worthy of a column of it’s own. But for today I’ll stick to sharing our favorite rice cracker toppings (the healthy ones that is, you know me). If you have any other recipes I’ve missed, send me an email. Topping 1

Cook up a small portion of scrambled eggs. Place a slice of smoked salmon (preferably organic or fresh from the fish market) on your rice cracker, a few slices of avocado and top it off with the egg. Pinch on a little salt and pepper and you have one of my favorite combinations.

Topping 2

Spread a generous layer of cream cheese on the cracker (also  organic) and then a light smearing of seeded mustard. Place a couple of slices of chicken filet over the mustard and finish it with a few thin slices of gherkin. Salt and pepper and bon appétit!

Topping 3

Nut paste (I mainly buy hazelnut paste or almond paste) with slices of apple. Super and simple and yet so tasty. Spruce it up a bit with a sprinkling of cinnamon and for anyone with a real sweet tooth, add a drizzle of honey.

Topping 4

Goat’s cheese; unbelievably delicious, especially if you choose the softer variety. Slices of that along with tomato and avocado, stacked up and topped off with some sprouts. Never forget the salt and pepper and before you know it you’ll be busy building up the second, and third, and …..

Topping 5

Spread a (thin!) layer of mayo on your rice cracker and then cover it with crumbled mackerel. You can buy this at the fish market but the one from the organic store in a tin is also very tasty. Finish it off with some sweet red peppers: fresh (with a light drizzling of olive oil, salt and pepper) or grilled (this can easily be done yourself or from a jar bought at the organic supermarket).

Topping 6

A winner for the vego’s. Mash half an avocado in a bowl with some salt, pepper, olive oil and some lemon juice. Smear the avocado onto your rice cake and then a few slices of boiled egg and tomato. Easy peasy.
