THE BEST FRUITS AND VEGgies FOR THE COLD WINTER MONTHS
– And how to prepare them –
Oh guys, I get so excited for tangerine season (I know I know, I am easy to please). I can eat a bag a day at the least. I don’t necessarily know if that amount is healthy but I don’t really care. It’s better than a bag of spritz cookies right? And pears too are slowly becoming ripe. A great fruit to stew or add to a salad with chicory and blue cheese. There are a ton of other fruits and veggies to indulge in this winter. Here are my favorites and how to prepare them.
Kaki fruit
Ever heard of these? I only discovered them a few years ago thanks to my grandma. Peel and eat ‘em, they’re so good. Or mix them in a salad with rucola and mozzarella and roasted pine nuts.
Apples
Apple sauce season is upon us. It’s one of those things I always eat when the temperatures drop. Peel some Cortland apples and put them in a pan, add a bit of water, some sugar (or agave syrup), let it simmer until the apples turn soft. Use a blender to make everything smooth or keep it as a compote.
Pears
A perfectly ripe pear may just be my all time favorite fruit. Oh, and they are an excellent addition to a green smoothie cause it gets rid go the broccoli or cauliflower taste. Or toast some bread, add some slices of Parmesan cheese and top it off with a pear. Add some walnuts and rucola and you will be happy as a clam.
Tangerines
As I already said, I can eat a bag a day. And the further into the month of December, the better they get. No recipe needed here, just eat them plain.
Chicory
I’m not a huge fan of chicory out of the oven. I prefer eating it in a salad with raisins, apples and walnuts. Add a good honey mustard dressing and it’s ready to be served.
Brussel sprouts
One of those vegetables a lot of people love to hate, which I can imagine, but it’s all about how you prepare them. I would never ever add them to a smoothie, but cooking them with some chopped up unions and garlic is the perfect match. You can even add some bacon bits too if you’d like. Just don’t eat them raw, cause then indeed, they taste lousy.
Cauliflower
The most simple, but delish dish is cauliflower soup. All it takes is 15 minutes of your time. What you need is 1,5 liter of boiled water and 2 blocks of vegetable broth, 1 union, 1 cauliflower, 3 other types of vegetables, 1 can of coconut milk, coconut out and fresh parsley.
Cook a chopped up union with a bit of garlic. Heat up water in a different pan and add the blocks of broth. Chop up the cauliflower into small pieces and add it to the pan filled with unions. As soon as the cauliflower is well-done, use a hand blender to mix it into a liquid substance. Add the can of coconut milk. Add some salt and pepper and a bit of nutmeg if you’d like. This soup is great without coconut milk too by the way.
Pumpkin
I could eat this all year round but it just somehow tastes the best in the winter. Here is my favorite recipe.
