AN EASY QUINOA SALAD RECIPE

Don’t know what to make for dinner this evening? Not in the mood for something that’s too heavy, but you don’t really want a cold meal either because it’s not too hot outside, but also not too hot? I’m at your service. What you want is a quinoa salad. Quinoa is one of the few super foods that you’ll still find in my kitchen cabinets (I’m kinda done with the whole super food hype). I love it, it’s healthy, very nutritious and very good for your digestive system. Here’s an easy recipe for you using quinoa. Add some meat or fish if your boy is sticking around for dinner. And hey, why not for you too.

Red quinoa salad

Ingredients

for 4 people

250 grams red quinoa (white is fine too)

half a pumpkin

1 pomegranate

2 handfuls of walnuts

1 handful of fresh parsley

1 handful of mint

juice from half a lemon

1 table spoon of sea salt

olive oil

Preheat your oven to 220 degrees. Cook some quinoa the way it’s labeled on the packaging and let it cool down. Slice the pomegranate in half and get rid of all the seeds (have a look on Jamie Oliver’s YouTube if you need some tips for the process). Mix the seeds with the quinoa. Then slice the pomegranate into small slices and put them in the oven, with a layer of olive oil, for about 60 minutes. Blend the herbs in a mixer until they’re chopped into tiny pieces. Mix it with the quinoa, 3 table spoons of olive oil, lemon juice, salt, pumpkin and the walnuts. This is a great meal for lunch or (if you make a larger portion) for dinner. Feel free to add other vegetables if you’d like, be creative.
