FORGOTTEN VEGETABLES WE SHOULDN’T FORGET ABOUT

The title above says it all: vegetables we forget about which we shouldn’t because they are great. There comes a point when you get sick of eating paprika, avocado and zucchini everyday, right? Every now and then you’ll add some pak choi and sweet potato into the mix, but those are exceptions. People, don’t forget about the below mentioned veggies either because not only do they taste great; they’re extremely healthy and look great on you dish.

Horseradish

I use this a lot. You can buy horseradish fresh from the market and rasp it or you can go to a grocery store and get it in a jar (fine too). Add it with your meatballs or some smoked salmon. Horseradish has a very distinguished flavor, so just make sure you dose yourself.

Cabbage Palm

Cabbage palm, also referred to as cavalo nero, is similar to kale and tastes somewhat the same too. This is a vegetable that might be forgotten about the most. A lot of people in Italy eat it with for example liquid and Parmesan cheese.

Turnips

Definitely a product you’ll come across in biological restaurants that have their own vegetable garden. Turnips contain a lot of vitamin C and calcium. The flavor is distinct and a little spicy. They taste great roasted out of the oven with a bit of meat or fish.

Jerusalem Artichoke

These artichokes are nutritious and very digestible. They are raw, so eating them as a salad is a great option. The flavor is a little sweet and nutty with a hint of regular artichokes.

Turnip Tops

Turnip tops are great when you combine them with sweet potato. They look a bit like rucola. Not only do they taste great, but they are incredibly healthy too. They hardly contain any calories (only 17 calories per 100 grams if you eat them raw) and contain a lot of beta-carotene, folic acid and some other antioxidants.
