LENTIL BURGERS WITH MUSHROOMS
Light, nutritious and vegetarian
When our marketing assistant asked me whether or no I knew a recipe to make a vegetarian burger, ask and you shall receive. “Something with mushrooms or so.” That was his only requirement. Vegetarian burgers are so easy to make, and don’t worry, even your meat loving boy is going to love these.
This is what you need
For 2 burgers
50 grams walnuts
200 grams cooked lentils (from a can is fine too)
1 shallot
1 garlic clove
6 mushrooms (which ever you please)
parsley
basil
1 table spoon of sesame seeds
1 table spoon of soya sauce
1 tea spoon of chili flakes
2 table spoon of olive oil
1 big egg
50 grams oatmeal
salt and pepper
As a topping: avocado, tomatoes, salad and mayo or hummus
How to make it
Preheat your oven to 180 degrees. Toast the walnuts in a dry pan and then mix them with the lentils, mushrooms, shallot, olive oil, garlic, herbs, sesame seeds, soya sauce and chili flakes in a mixer. After it’s been mixed, kneed it together with the egg and oatmeal. Leave it out to rest for 30 minutes. Now it’s time to build the two burgers. If it’s still a little too wet, add a drop of olive oil. bake them for about 5 minutes on either side. Then put them on some baking paper and put them in the oven for another 10-15 minutes. Now it’s time to start finish it off. Slice your tomatoes and avocado and plant them on your burger. Add it into a bun if you’d like and don’t forget a drop of mayo or hummus!
