Happy & Healthy sunday
I think drinks on Sunday the most fun. Maybe because everyone has to work again the next day, so you enjoy the last free hours even more.
A dried sausage, cheese butterflies, or a crostini with ham and truffle mayonnaise (one of my favorites) is all of course divinely delicious, but not necessarily good for the waistline. On the other hand: just nibbling on a bit of crudité is also so uninviting. Now, it is indeed the first day of autumn today and there won't be any beach days in the Netherlands for a while, but that doesn't mean we should let our killer bodies go to waste. So I'm going to treat you to a few healthy snacks and drinks. And no nibbling on green sticks, don't worry. Both men and women will be happy with these bites, believe me. Just be a little careful with the amount of wine, okay!
Healthy snacks
Date with a walnut
Buy fresh dates and remove the pit.
Toast walnuts briefly in a dry pan and place them where the pit was in the dates. Super simple, super healthy.
Leaf of endive
Remove the leaves from a head of endive and lay them down like little boats. Fill them with a roasted walnut, a piece of delicious, ripe pear, and a mini piece of blue cheese.
Kale on a sandwich
Bring water with three cloves of garlic to a boil. Then add three handfuls of kale or green cabbage. Cook the vegetables briefly until the leaves are just soft. Then drain and let cool.
Toast a slice of spelt bread. Drizzle a little olive oil over it and rub it with a halved garlic clove.
Squeeze the water out of the kale, add some salt and pepper, and chop the greens a bit. Place some of the kale on a toast, finish with a squeeze of lemon and a drop of olive oil.
Figs with goat cheese and honey from the oven
Preheat the oven to 200 degrees.
Cut a cross in the top of each fig, but make sure they stay whole. Gently open the figs and crumble some fresh goat cheese inside. Add a small drop of honey and a bit of thyme if you like. Place the figs in a baking dish and bake for eight minutes. If the cheese isn't melted enough, leave them in for a few more minutes.
Simple frittata
Whisk 6 eggs in a bowl, along with salt, pepper, and all the green, fresh herbs you have at home. Also add a bit of grated Parmesan cheese, or another leftover cheese you have in the fridge. Melt some (odorless) coconut oil or olive oil in a frying pan and let it get hot. Then pour the mixture into the pan and lower the heat. Let it cook slowly until it is no longer runny. Let the frittata cool and then cut it into wedges.

Bloody Mary
What do you need and how do you make it?
– Tomato juice (2.5 parts)
– Vodka (1 part)
– Worcestershire sauce
– Lemon juice
– Tabasco
– A stalk of celery
– Black pepper
1 part = 30 ml
Use a long drink or a large whiskey glass for this. Fill the glass with ice, vodka, a few drops of Worcestershire sauce, and Tabasco. Stir everything well together with a long spoon. Then add the tomato juice until the glass is full. Squeeze in a bit of lemon juice and some ground pepper. Stir it all together again and garnish with a stalk of celery.
Home Made Ice Tea
This drink is non-alcoholic. Boil a liter of water and let four mint tea bags steep for at least half an hour. Then let it cool well in the fridge. Once the drink is nice and cold, add a bit of ginger syrup, lemon slices, fresh mint, and ice cubes.
