Monday 15-12

Today was a super tough day. It was a really fun weekend. On Saturday, I went out with friends and my little brother joined us as well. On Sunday, we spent the whole day in our pajamas. That’s allowed sometimes because the Monday after was quite a tough day where I also worked on school in the evening. Everyone deserves a day off now and then, right?

Tuesday 16-12

Today I left school a quarter of an hour earlier. I drove to Eindhoven where my friend Daan surprised me with a visit to take a closer look at the always cozy Brabant. After Eindhoven, we also did some sightseeing in Handel and we had a nice dinner out. I should have just grabbed a meal salad instead of the spare ribs, haha.

Wednesday 17-12

Because I have a deadline at school tomorrow, I worked on my assignments all day. As a distraction, I did make pumpkin soup with our dad in the evening. Super delicious, I'll give you the recipe.

Thursday 18-12

After a day of school and an interview for the Eindhovens Dagblad, the moment has finally come: vacation. Wonderful. Now I finally have the time to do all the things I normally don't have time for, like cleaning my room properly and washing my grandpa's car.

I want to wish everyone very nice, free days.

Pumpkin soup recipe

250 gr. pumpkin
80 gr. carrots
50 gr. celery
sprig of rosemary
1 clove of garlic
300 ml chicken broth
pepper
pinch of ground cumin

1 person
50 minutes

1. Peel the pumpkin and the carrot and cut them into small pieces

2. Wash the celery and cut it into small arcs

3. Peel the onion and chop it

4. Peel the garlic clove and chop it

5. Remove the leaves from the sprig of rosemary and chop them finely

6. Place a soup pot over moderate heat and heat the oil

7. Add the carrot, celery, onion, rosemary, cumin, and garlic

8. Stir-fry the ingredients, but be careful not to let everything discolor

9. Then add the pumpkin and chicken broth and bring this to a boil

10. Let this simmer gently for 20 minutes

11. Puree the soup with an immersion blender and season it with a bit of pepper
