THE BEST OMELETS IN AMSTERDAM
So, did you have a nice evening yesterday? Are you just rolling out of bed or have you already been up for a quarter of the day? I woke up in Paris and am probably, as you read this, sitting on the terrace of Café de Flore and have ordered a soft-boiled egg . A soft-boiled egg, with small strips of toast next to it that you can dip into the egg. Along with a large glass of fresh orange juice and a green tea. After a late night where I think the next day ‘I will never drink again’, that is the only thing I feel like: egg. But even when I don't have a hangover, I often make an omelet or a fried egg for myself at home. During my internship at Hotel de Paris, I had to poach at least fifty eggs a day, so I'm not bothered by that anymore. Or I make scrambled eggs with cheese, also so delicious. No matter how simple it is to make yourself, it often tastes a bit better outside than at home. And that's a good thing, because at least then I'm out of bed.

Buffet by Odette You all know by now that this is one of my favorite places. On the menu is a truffle omelet, and once you've tasted that, you'll prefer nothing else. Oh, the taste of truffle is incredibly delicious. Odette also has tasty freshly squeezed juices. Like carrot-apple-ginger juice. A good detox after a wild night out.
Café De Hoek You sit, on a corner of the Prinsengracht, mostly among tourists, but I never mind that much. Harry is the owner of café ‘De Hoek’ and knows almost everyone. There are many regular guests there, besides tourists. Many of them have written a book or write pieces for a newspaper. From a tiny kitchen come the most delicious omelets. In countless variations: with cheese, bacon, roast beef, ham, and vegetables.
De Ysbreeker You can take a nice walk through the city to eventually eat an egg at the Ysbreeker. It's so beautiful to walk along the Amstel (also good for your hangover). The Ysbreeker has a huge terrace by the water. Have a poached egg with smoked salmon and Hollandaise sauce: delicious.
Omelegg A real omelet place, so they know what you can do with an egg. The menu is full of crazy names like Popeye, Greek wedding, El chorizo, or Farmboy. But you can also build your own omelet. If this isn't a good place to survive your hangover, then I don't know what is.
