A drink with Rens
I often flip through the book “Powerfood” by Rens Kroes for inspiration. Her breakfasts are divinely delicious, take for example the chia pudding with banana and almond milk. Or the quinoa salad with lots of vegetables and feta cheese. I can now gradually make them without a recipe. I make it so often. Powerfood is now with the translator to be published in English as well and I believe she has been in the kitchen for weeks to test-cook for her second book. If you really can't wait, nutrition coach Rens also loves to give advice and makes meal plans for you. Well, if you want to look like a Victoria’s Secret Angel you are of course at the right place with her.
With these cold days, we don't feel like homemade iced tea or lemonade. At least, I don't. I asked Rens to share a winter drink with us and she wanted to. Here it comes.
“It keeps you warm! This drink is something different than your morning coffee! I love it, especially in these cold winter months.” Look, that's what I feel like.
Here’s what you need and how to make it (for 1 cup):
250 ml water
100 ml creamy coconut milk
½ teaspoon cinnamon
½ teaspoon ginger powder or ½ tbsp fresh ginger juice
a pinch of vanilla powder
a pinch of cardamom
1 tea bag of rooibos
1 teaspoon honey
Heat the water, coconut milk, and spices in a saucepan, stir well and pour it into the cup. Put the tea bag in for 1 minute and sweeten it a bit with some honey if desired.
