Jenny’s Apple Cranberry cake

Onze gezondheid en fitness redacteur Jet hibernate de hele maand november om een storm te koken. Of in haar geval, een kookboek. En omdat ze niet wil dat wij over de schreef gaan als het om gezondheid gaat, she’s found a couple a cool fit girls to guide us through the month. To kick it off, we’ve got Jenny Alvares, a food, travel and sports blogger. She’s going to be introducing us to her healthy and fit lifestyle.

Everyone’s got a bit of a sweet tooth right? I am obsessed with cake but unfortunately they usually contain more fats than egg whites and that’s why I opt to bake them myself. That way I know exactly which products it contains and how much of it. Here’s a healthy cake you can eat every day. Plus, I’m not exaggerating when I say it’ll be the best cake you’ll ever have.

Combining cranberries and apples is divine. This cake is very similar to banana bread but you replace the bananas and dates for applesauce and I’ve mixed slices of apples together with dried cranberries.

Which ingredients for you need for one cake?

– 3 eggs

– 340 grams of applesauce

– 1 Granny Smith apple

– 130 grams of oats or oatmeal flour

– 2 scoops of egg white powder

– 1 tea spoon of baking powder

– 60 grams of dried cranberries

– Coconut oil or cooking spray

Preheat the oven to 175 degrees and chop up your apple into small blocks. Mix the eggs, the baking powder, the oatmeal flour, the applesauce and the egg white power until it becomes a smooth and fluid. Then add the apples and dried cranberries, give it a bit of a stir. Grease up your cake mold – opt for one made out of silicon. Pour the cake mix into it and put it in your already preheated oven for 45 minutes.

Nutrients value per slice (if you slice it into ten equal pieces):
