Blueberry’s all over

A bowl of blueberries doesn't stay longer than a quarter of an hour in our editorial kitchen. Super cool. You can make many more delicious things with blueberries than just eating them by the handful or stirring them into your bowl of yogurt. Cake, ice cream, muffins, pancakes, in a salad... All pretty healthy, you understand. I'm going to put on my New York Fashion Week outfits in 2 weeks, by the way.

Smoothie

What do you need?

– half a banana

– splash of coconut milk

– handful of blueberries

– handful of spinach

Put all the ingredients in the blender. If you find the shake a bit too thick, you can add a little (coconut) water.

Muffins

This is a very tasty and easy recipe from my foodie friend Daisy from I Love Health.

Pancakes

Recipe for 1 pancake

– 2 eggs

– 1 banana

– 25 grams of oatmeal

– cinnamon

– handful of blueberries

– coconut oil for frying

Whisk the eggs in a bowl, add the oats and mash the banana into it. Boom, the batter is ready. A little coconut oil in the pan and when the pan is hot, add the batter. Fry until golden brown on both sides and you're done. A little cinnamon on top AND I would add some blueberries if I were you.

Ice cream

The weather will be nice this weekend, so ice cream will come in handy. We're going for ice pops, so you need a mold for that. You can buy those in cooking stores, Hema, or Blokker.

Recipe for 6 ice pops

– a honeydew melon

– 300 grams of blueberries

– juice of a lime

– 5 tablespoons of vanilla yogurt

– and for the sweet tooth, a drop of agave syrup

Put the melon (peel it and cut it into pieces, of course) with the lime juice in the blender. Pour this mixture into a container and set it aside in the fridge. Then mix the yogurt with the blueberries and put everything in the blender. Now you can fill the molds. Start with the melon and then pour the vanilla/blueberry mixture on top. You'll get a nice overflow of color. Put it in the freezer for a few hours and it's ready.

Salad

Blueberries and goat cheese go really well together. Combine that with baby spinach or lamb's lettuce. Add some roasted hazelnuts and you're done. Just sprinkle a dressing of olive oil, mustard, and balsamic over it.

So, now be careful not to see blue. Just kidding.
