EATING DIARY
3 days after the vacation
You might not want to believe it, but in my three weeks holiday I ate dozens of plates of spaghetti and drank glasses of limoncello (and sambuca). I did start every morning quite dutifully with a round around the hotel, but I stopped that after three days. I found a little swim in the pool more enjoyable.
Well, now I think everyone is always incredibly curious about what we eat every day, at least I often get that question and I always find it fun to know about others, so tadaaa here is a little eating diary of my first three days back in the office. All nice and well that Italian cuisine, it was also delicious, but I also find it nice to get back into my own routine a bit.
Monday
Morning:
Grits from Albert Heijn. A bit of boiling water added and done. Then another apple.
Afternoon:
I have an interview at Coffee Coconut so I also have lunch there with scrambled eggs with avocado and a few cups of ginger tea.
In between:
Evening:
There is still a bite of chicken in coconut milk left from the previous evening. I buy broccoli and zucchini and stir-fry that in. Additionally, a simple salad with cherry tomatoes.
Tuesday
Morning:
Water and lemon
Green rehab smoothie from Rein (one of my favorite healthy spots). Cucumber, basil, apple, spinach, and ginger.
In between:
Pieces of coconut
Afternoon:
I eat at the editorial office and on the menu is a salad with mozzarella and smoked chicken.

Evening:
I do a lesson with Robby Nelson. After the training, I immediately take a protein shake from Garden of Life. On the bike home, I stop by Stach, the only store where I buy ready-made meals, because everything is super fresh. I choose a salad with chickpeas, sweet potato, and broccoli.
Wednesday
Morning:
Water and lemon
Goat yogurt with blueberries, coconut flakes, and some seeds, sunflower, goji berries
In between:
Bag of BitesWeLove
Afternoon:
Salad with goat cheese, sun-dried tomatoes, and pecans
In between:
2 wild peaches
Evening:
I cook at home. Piece of white fish, bimi, a salad with avocado. And a glass of red wine.
That was it!
