THIS IS HOW YOU QUICKLY AND EASILY SERVE THE TASTIEST LUNCH

Every day we have lunch at one long table with our neighbors (a production house that makes all our beautiful videos and where we used to have a small upstairs room that was our editorial office).

The salads, rice cakes, crackers, and eggs are always wonderfully prepared, but on Fridays we have cleaning duty. For half of the group, someone bikes to the fries vendor, because they always look forward to fatty Friday, and for the other half (that's me), you get to show off your skills in preparing the food when it's your turn. If you also have to prepare a lunch for a large group, I’ll give you some tips to quickly and easily get delicious things on the table, besides the crackers, sandwiches, daily spreads, and toppings of course.

Eggs deluxe

Almost everyone likes eggs. A boiled egg might be a bit boring and frying them in a pan is quite inconvenient for so many people, but scrambled eggs are very easy and can be made in large portions.

Whisk about ten eggs in a bowl and add salt and pepper. If you want, you can also add some milk or cream, which makes it a bit creamier.

Put a bit of coconut oil, olive oil, or butter in the pan and then add the whisked eggs. Keep stirring gently so it doesn't turn into an omelet. Don't leave it in the pan too long, or it will become too crumbly and dry. It's nice to serve with a bit of smoked salmon.

Even tastier avocado

Take an avocado and cut it in half, remove the pit, and sprinkle a bit of olive oil, salt, and pepper on top. Then, in another bowl, mix some Dutch shrimp or crayfish with a small dollop of mayo (which you can also make yourself). Mix it and then put it back in the hollow of the avocado, add a little lemon juice on top, and serve! (half an avocado per person, that is)

Easy pizza

This might be more for the guys, but who knows, the ladies might enjoy it too. Take a Turkish bread and cut it in half horizontally so you have two large round slices. Then, pull out a bit of the bread so that only a thin base remains. That's the base for the pizza. After that, you can put anything on it that you like. I always start with tomato sauce and then add, for example, goat cheese and spinach. Mozzarella works too. Or Parma ham and mushrooms. Then pop it in the oven for 10 minutes at 180 degrees.

Delicious pancake

This one is very easy and I often make it for breakfast, but you can also easily serve this during lunch and just cut it into small pieces. Read here in the Fun & Healthy Journey how to make it. Serve it with a bit of syrup for the sweet tooth among us.

This is might be a bit of work, but you will definitely steal the show.

Salad with chickpeas

A very simple and nutritious meal. Take a large bowl and add: chickpeas, cherry tomatoes (cut in half), arugula salad, avocado (also cut into pieces), small rings of spring onion, and some olive oil and balsamic vinegar. Then add salt and pepper to taste and bon appétit.
