ALL ABOUT THAT SNACK ATTACK

At the office, I always have my snacks neatly with me. A late morning bowl of yogurt, a piece of fruit after lunch, and an afternoon snack in the form of raw vegetables. All safe. But in the evening after dinner, I have a serious problem.

Or yes, I actually don't want to call it a problem at all. Let me put it differently. After dinner, I just treat myself to something nice. A kind of pre-bedtime treat or something. Mr. Right hasn't shown up yet, so yeah… Someone’s gotta do it.

Because once and for all, darling, you really won't get fat from a snack in the evening. Bullshit. Okay, I would definitely ban that bag of chips and bottle of cola from your life if you want to stay in shape (by the way, I also enjoy a chip now and then, but that cola, well that cola…). There are so many delicious, easy, and responsible snacks that do go hand in hand with a healthy lifestyle. Healthy, light, and perfectly fine to dive into the couch with. Responsible snacking, that's what you want, right?

1. Raw vegetables with hummus

Carrots (all eyes on me when I'm nibbling behind my laptop), cucumber, celery, radishes, cauliflower florets… A bowl of hummus on the side and dip away.

2. Sweet & spicy chickpeas

Preheat the oven to 200 degrees. Take a can of chickpeas, rinse them off, and pat them dry with paper towels. Spread the chickpeas out on a baking tray and drizzle them with olive oil. Bake the chickpeas in the oven for 30 minutes. In the meantime, make a mixture of two tablespoons of olive oil, a splash of maple syrup, salt, cayenne pepper, and smoked paprika powder. Remove the chickpeas from the oven and stir the spice mixture through the peas. Bake for another 10 minutes until they are crispy. Let them cool down well.

3. Date with dark chocolate and peanut butter

Medjool dates are the best for this snack. Scoop a teaspoon of almond paste into it and add a piece of dark chocolate. Healthy little bonbon.

4. Banana ice cream

Put two bananas in the blender. Not too long, or you'll get soup. Banana soup, also quite nice by the way. Optionally add chopped walnuts, coconut flakes, and dark chocolate, and you have your own healthy ice cream.

5. Warm apple from the oven

Preheat the oven to 180 degrees, peel an apple, cut it into pieces, and add cinnamon, raisins, and a squeeze of lemon juice. If you want to do it right, make a healthy crumble. You do this by mixing 50 grams of oats with a tablespoon of cold butter and a tablespoon of coconut blossom sugar. Just a little bit, because the longer you blend, the softer the butter gets, and then you get a kind of soft thick oat butter, while you want crumbs. Make it 30 minutes if you go for the crumble variant.

Or make one of these cakes , you have a nice late-night snack (or breakfast) for the whole week. Enjoy!, At the office, I always have my snacks neatly with me.
