Happy & Healthy
Ahaaaa, Easter is coming again and that means my mother is sculpting a little lamb out of a pack of butter again, it means that Easter eggs can be searched for again AND that the tastiest Easter bread is on the table. I think it's a very nice time, also because it's often the first moment of the year that the folding doors can actually be opened and that the dining table is dragged outside. Yellow checkered tablecloth, napkins, matzos, and brown sugar. Or asparagus with salmon, also very tasty. And hopefully the strawberries are already a little sweet enough for on a crispbread.
Eggs cannot be missing from the table, and not those of chocolate but those of the hen. There is so much more deliciousness than just boiled eggs. I'll give you some ideas:
- Scrambled. Scrambled eggs with a bit of cream and chopped chives. Put a pan on very low heat with a knob of butter. Keep stirring the egg and serve it just before the scrambled egg is done. It will still set a bit on the plate. Yummy.
- Stuffed eggs. I know, incredibly old-fashioned and very bourgeois, but I think they are delicious snacks. So simple too. You boil the eggs, cut them in half, pop the yolk out and make a nice mixture with herbs, a drop of mayo, and a squeeze of ketchup. That mixture goes back with the egg white and ta-da!
- Asparagus with egg. Oh people, the asparagus season is coming again. Delicious with boiled ham or smoked salmon. A small mini potato on the side and a mashed egg. You can wipe me up.
- Eggs Benedict. Well, what else can I say about this? Perhaps the tastiest egg dish EVER. I will refer you to my great friend Jamie Oliver.
