FALAFEL IS THE NEW QUINOA

“Jet, what shall I cook today?” is a question I am often asked. And then it is of course expected that I whip up about five dishes, preferably with a recipe included. But that can be quite challenging, as I also find myself in the supermarket almost daily thinking about what to put on the stove. Especially now that I live with someone, I always want to put in just a little more effort, while before I would quickly throw something together for myself when cooking alone.

But okay, you want a recipe so I will give you one. I love not spending too long in the kitchen. Today something with chickpeas, because they are super tasty, nutritious, and packed with protein. That makes your body happy, remember? And no, it won't be hummus, but falafel balls. Or a little burger, depending on how you knead it. The man will first make a bit of a disgusted face, just don’t tell him what you’re making, but just serve it to him and add a (spelt) sandwich on the side. Then it’s just a (super healthy) hamburger.

Falafel burger

This is what you need

For 2 people

– 400 grams of cooked chickpeas (canned is fine by me, just rinse well)

– 2 tablespoons of oatmeal

– handful of fresh parsley

– handful of fresh coriander (if you don’t like that, then a bunch of chives)

– 1/2 teaspoon of cinnamon

– 1 small red onion

– 1 clove of garlic

– pepper and salt

– oil for frying

– optionally spelt sandwiches to make it a burger

– raw vegetables like tomato, cucumber, and lettuce to build a burger

Here’s how to make it

Child can do the laundry: puree the chickpeas, onion, garlic, fresh herbs, spices, and oatmeal in a food processor until it forms a kind of dough. If you find it too dry, you can add a little water. Knead the dough into two equal burgers.

Let the oil heat up in the pan and fry the burger on both sides for 3 minutes until brown.

Serve on a toasted spelt sandwich and finish it off with vegetables of your choice.
