On weekends, I like to stay in bed a little longer and wait for someone to bring me breakfast in bed. Just kidding, of course, because that won't happen. And by the way, I secretly prefer to make my breakfast myself. Anyway, I take it a bit easier and postpone my workout until the end of the morning.
No quark or protein shake for a while, but something warm and sweet. To then crawl back under the covers with my plate of goodies and my book after cooking.
But today I'm doing it a bit differently. The sun is shining on my royal balcony (I wish I had singing talent, then I would go live) and the skirts are flouncing by the canals one more time. Indian summer, how I love it! It’s time for breakfast on the balcony!
In my Guilty Pleasures, I told you that I start drooling at the word cinnamon roll. Now I have a variant here for which you don't have to skip lunch and dinner. It contains fewer calories than the warm croissant with butter and jam from your lover. But it’s just as delicious.
Serves 1 (yeah sorry, I haven't found him yet, too busy anyway)
Preheat the oven to 180 degrees.
Dough
75 grams of oats (and two tablespoons of (oat) flour)
1/2 tsp baking powder
1 tablespoon coconut oil
half a mashed banana
Filling
2 pitted dates (preferably as soft as possible)
1 tsp cinnamon
Topping
Your favorite yogurt/quark as a topping. Look, you could technically use a greasy frosting now, but let's just keep it healthy, okay?
I use nice full-fat Greek yogurt for this meal. Just because I can. And a teaspoon of maple or agave syrup or sweetener of your choice.
Put all the ingredients in the blender until a dough ball forms. Then roll out the dough using the flour. Mash the dates with the cinnamon until a creamy mass forms. Spread the date paste over the dough and roll it up. Cut (possibly with a pizza cutter) four equal rolls from it. Lay the rolls flat in a baking dish and bake the cinnamon rolls for ten minutes at 180 degrees in the oven. Mix the yogurt with the sweetener and add it to the warm cinnamon rolls.
Make sure to eat them warm, that's when they taste best. And me? I sprinkle a little more cinnamon on top. Just because I can. And tonight I'll eat a few more. Because I doubled the recipe, of course.
