Oh guys. Do you know those apple pies from Appie? I'm really into them. I've been seeing apple pie everywhere for days. Walking through the city, in magazines, on the internet, and on signs along the road. Apple pie, everywhere. The time of year? I don't know. But I need it. Anyway: mix apples, cinnamon, oatmeal together and it's guaranteed to be a success.

So when I came back late Sunday night after a lovely weekend in Maastricht, I really couldn't hold back anymore. Apples check, cinnamon check (duh), oatmeal check, and dates check. I made up the rest and it turned into quite a party.

Okay, without fatty butter and sugar, but still healthy. Enjoy guys, especially with a dollop of salted caramel (I already gifted you that recipe on Saturday).

Healthy apple pie

You need: a baking pan of 20 cm.

Further:

  • 75 grams almond flour
  • 75 grams spelt flour
  • 50 grams coconut blossom sugar (from Royal Green)
  • a handful of dates
  • 1 beaten egg
  • 2 tbsp coconut oil (from Royal Green)
  • 2 apples (Elstar) cut into small pieces
  • 25 grams soaked raisins
  • 2 tbsp maple syrup
  • 1 handful of crushed walnuts
  • 2 tbsp oatmeal
  • 2 tsp cinnamon
  • a pinch of salt

Preparation of the healthy apple pie:

  1. Preheat the oven to 180 degrees. Line a springform pan with baking paper and grease the edges with some coconut oil.
  2. Soak the dates in hot water, let sit for ten minutes, and then mash them until you get a smooth mass.
  3. Mix the almond flour, spelt flour, a pinch of salt, and the coconut blossom sugar.
  4. Beat the egg in a bowl and let the coconut oil melt in a pan over low heat.
  5. Then add ¾ of the beaten egg, the date puree, and the coconut oil to the dry ingredients and knead into a dough.
  6. Meanwhile, let the raisins soak for a few minutes in cold water and pat them dry.
  7. Cut the apple into pieces and mix them in a bowl with the raisins, cinnamon, nuts, and maple syrup.
  8. Line the bottom and edges of the springform with about ¾ of the dough. Spread the oatmeal over the bottom. This is to absorb any moisture from the apple.
  9. Then fill the mold with the apple mixture and press it firmly into the mold.
  10. Make thin slices from the remaining dough and create a lattice over the pie as nicely as possible.
  11. Brush the dough with the remaining egg mixture.
  12. Bake the pie for 40 minutes. Keep an eye on it, because if it gets too dark, you need to lower the oven a few degrees.
