SPECULAASBROKKEN

Sinterklaasje, come on in, with your helper. Because after this recipe on December 5th, the table will be full of cozy and healthy treats.

Have you all the filled speculaas and the taaitaai have you tried it? And let's not forget Jet's pepernootjes.

I am a huge fan of speculaasbrokken. Unfortunately, that love affair ended yesterday. Why? Read here. So I transformed this recipe into a healthy variant of the crispy, crumbly speculaasbrokken.

Ingredients:

– 250 grams spelt flour

– 5 grams baking powder

– 120 grams coconut blossom sugar

– 100 grams soft butter

– pinch of salt

– 2 large tablespoons speculaas spices

– 4 tablespoons plant-based milk

– blanched almonds

Preparation:

1. Combine all ingredients and knead until a dough ball forms.

2. Let the dough ball rest in the refrigerator for at least two hours and preheat the oven to 175 degrees meanwhile.

3. Take the dough out of the refrigerator and roll it out until you have a smooth sheet about one centimeter thick.

4. Place the dough on a large baking sheet and distribute the blanched almonds over the dough.

5. Bake the speculaas for about 30 minutes until golden brown.

6. Let the speculaas cool down (the hardest part of this story) and place the whole piece on a large wooden board.

The most fun? Make a large batch (triple recipe) and put it all on the table. Let everyone break it apart. Is it gone quickly? Then you know you did a great job. A delicious responsible evening without feeling too guilty tomorrow.
