Anyone who says the economy is not doing well should try eating in Amsterdam. Correction: trying to eat. Even if you call three days in advance, the most expensive restaurants are completely booked. And every time I fall for it again. If I call Kaagman & Kortekaas (you really have to go there if you love good food and nice people), I am almost laughed at. Rijsel is definitely not an option within a week and Toscanini, well, I only get a chance there if a reservation unexpectedly cancels. Also in Antwerp, I always miss the mark. I've been wanting to go to my favorite restaurant The Jane for half a year, but you can only reserve a month in advance and apart from two lunch spots on Thursday and Friday, it's completely full.

I've had enough and decided to approach it differently. I just spent a quarter of an hour with all the restaurants that were still on my ‘must-eat list’. Just reserved every week, starting in a month. Kaagman, Rijsel, Bordewijk; I'm eating there. Not tomorrow, but next month. And before you know it, it's done. And now the fun task of filling those reservations with friends. So if you're in my little black book and we've been saying for a long time that we really need to eat together; you know you can expect a call from me.
