THERE'S NOTHING WRONG WITH MAYO.
At least...
Mayonnaise has a bad reputation and well, just look at the ingredient list on the back of such a jar, you'll see a lot of names you've never heard of. But if you make mayo yourself, with egg yolk, mustard, and oil, then there's really nothing wrong with it. In fact; these are really healthy fats. Delicious to spread a layer on your sandwich and then decorate with tomato. These good fats provide a long-lasting feeling of fullness and help lower your blood sugar levels. This prevents ssnack cravings later in the day. There are so many ways to use mayonnaise: in salads, with grilled chicken, fish, or with vegetables. And yes, of course, I do have a jar of Hellmann's mayonnaise at home and it's also delicious, but in moderation. As is the case with everything.
But still, nothing beats homemade mayo and that is really a lot better for your body. And here too, it still applies... in moderation.
This is what you need for a small jar of 350 ml
2 egg yolks
1 teaspoon of mustard (I think Dijon mustard is perfect for this)
juice of half a lemon
140 ml (good!) olive oil
145 ml sunflower oil
sea salt and freshly ground pepper
Take a food processor (quick and easy) or a bowl with a whisk (very good for the muscles). Put the egg yolks in the bowl and add the mustard, vinegar, and lemon juice and whisk (or mix) everything together.
Mix the two oils in a bottle or a jug, pour in a very small amount into the egg yolks and mix the whole thing. Then add a little bit more and mix again, for at least 3 minutes. If all goes well, all the ingredients should now be well combined. Now you can keep whisking and slowly add a stream of oil. Keep whisking until you feel the mixture has the right thickness. The olive oil doesn't have to be completely used up. Taste well in between and add salt and pepper to your liking.
Tip 1: you can also mix in a little bit of truffle paste, then you have a super deluxe truffle mayo.
Tip 2: if the mayo starts to curdle or separate, add a little warm water, then you'll be back on track in no time.
