WITH THIS RECIPE YOU SCORE POINTS TOMORROW MORNING
The Brits are known for their Afternoon Tea. And the main component of the classic Afternoon Tea is of course: the scone. With clotted cream and jam, yes. Because if you're going to do it, you might as well do it as calorie-rich as possible. The Brits can do that like no one else and I love it. Now you understand that during the time I spent as a Londoner, I had to know where to eat the best scones in the city. That was the first question asked when we had visitors. Sorry, this doesn't do my name much good, but hey, let's keep it a bit cozy.
How nice would your Sunday morning be if you could enjoy warm scones in bed that are also healthy? Maybe you can subtly slide this recipe under your loved one's nose. Can you turn over one more time tomorrow morning.
Ingredients:
200 gr spelt flour
5 gr baking powder
70 gr cold butter cut into cubes
1 ripe banana, mashed
1.5 tsp vanilla extract (or the seeds of a vanilla pod, even better)
1 tsp cinnamon
120 ml buttermilk
pinch of sea salt
25 gr chopped walnuts
– Preheat the oven to 200 degrees.
– Put the spelt flour, baking powder, butter, cinnamon, vanilla, nuts, and salt in a bowl and mix it with your hands until you get coarse pieces. Don't knead too long.
– Mix the banana into the dough along with the buttermilk. If the dough feels too dry, add a little extra buttermilk.
– Let the ball of dough rest for about 15 minutes in a cool place.
– Dust the countertop with some spelt flour and place the ball of dough on the flour. Roll the dough out to about 3 centimeters thick.
– Use a cup or glass to cut out circles from the dough and place them on a lined baking sheet.
– Brush the scones with a little milk, this will give them a nice shine.
– Bake the scones for about 10 minutes until golden brown.
For the topping:
half a box of frozen fruit (I usually take raspberries)
1 tbsp chia seeds
2 tbsp maple syrup
– Heat a small saucepan over medium heat.
– Add the raspberries and let them simmer gently until the fruit is thawed.
– Then reduce the heat and add the chia seeds and maple syrup.
– Stir well and let it sit for 10 minutes.
– If the jam is not thick enough, add a little extra chia seeds.
– The same goes for the maple syrup. Not sweet enough? Then add some extra maple.
Also delicious: a spread of nut butter and some banana slices between your scone. Because yes, two is fine...
