3X OATMEAL TOPPERS
(That you don't know yet)
Around eleven o'clock in the morning, the first sour candies, nuts, and now chocolate Easter eggs start to wander around the office. However, they never reach my corner of the editorial team. ’You can skip Simone,‘ is what they say to the new intern. Yep, I'm not a snacker and by that time I'm still really full from my breakfast. Especially when I've had some oatmeal. Earlier I told you here how oatmeal can give you such a filling feeling. Are you, like me, addicted to your oatmeal in the morning but could use some new inspiration? Voilà: you probably don't know these three variations yet. And you prep them all the night before.
1. Overnight banana chocolate chip
• 2 tbsp SKYR
• 40 grams of oats
• 150 ml almond milk
• 1 tbsp ground flaxseed
• ½ tsp vanilla extract
• pinch of salt
• 1 tbsp maple syrup
• ½ ripe banana
• 2 tablespoons raw chocolate nibs
1. Mix all the ingredients, except the SKYR, in a bowl the night before.
2. Stir well and let it sit in the fridge overnight.
3. In the morning, add the SKYR, mix it, and sprinkle the whole thing with some extra nibs.
2. Tropical overnoats
• 3 tbsp coconut yogurt
• 30 grams of oats
• 2 tbsp coconut milk
• 1 tbsp chia seeds
• ½ tsp vanilla extract
• pinch of salt
• 1 tbsp honey
• a quarter mango, diced
• handful of pineapple, diced
• 2 tbsp shredded coconut
1. Mix all the ingredients, except the yogurt and coconut, in a bowl the night before.
2. Stir well and let it sit in the fridge overnight.
3. In the morning, add the yogurt and sprinkle the whole thing with the coconut.
3. Strawberry cheesecake.
• 2 tbsp full-fat Greek yogurt
• 1 tbsp chia seeds
• 30 grams of oats
• 150 ml almond milk
• 1 tbsp lime zest
• ½ tsp vanilla extract
• 1 tsp lime juice
• handful of strawberries, chopped
1. Mix all the ingredients (with half of the strawberries) in a bowl.
• 1 tbsp maple syrup
• pinch of salt
3. Drizzle the whole thing in the morning with a bit of lime juice and top it off with the rest of the strawberries.
2. Stir well and let it sit in the fridge overnight.
