3X DISHES WITH
SWEET POTATO

We Dutch are kings in eating potatoes. Boiled, baked, fried or of course the traditional mashed potatoes. And as I already told you, I am anything but a Dutch person when it comes to food. You really won't please me with a crispy potato croquette, velvety mashed potatoes or crunchy pommes duchesse. But still, there are also recipes where you think you can't get around that potato. Exactly, you THINK so. Because I have the solution for that, of course. here I am extremely fond of.

sweet potato . And I love to make fries from it with a huge dollop of homemade mayo. Yehes. But I also have a book full of too delicious healthy recipes. The taste of sweet potato is sweet and somewhat spicier, which gives your dish more flavor. In addition, this tuber (because no, it is not a potato) is packed with fiber. And that fiber is good for your intestines. In short, the perfect alternative to the carbohydrate bomb.. Looking for a nice warming recipe for tonight? You must try these three dishes at least once.

1. Sweet Potato Soup (for 4 people).

– 1 onion, finely chopped

– olive oil

– 3 cloves of garlic, finely chopped

– 2 teaspoons grated fresh ginger

– 1 tsp chipotle powder (smoked pepper) or cayenne pepper

– 500 g sweet potatoes, in pieces

– 1 liter broth

– 200 ml coconut milk (can)

– juice of 1 lime

– fresh coriander for garnish

1. Heat a little oil in a large pot and sauté the onion together with the garlic over medium heat.

2. Add the sweet potato along with the ginger.

3. Add the broth and let the potatoes cook for at least half an hour over medium heat.

4. Add the coconut milk.

5. Puree the soup with an immersion blender or a blender.

6. Squeeze the juice of the lime and add it to the soup.

7. Serve the soup with coriander.

2. Curry with Sweet Potato (for 4 people).

– 1 red onion, chopped

– 3 cloves of garlic, minced

– 1 red chili, finely chopped

– piece of ginger about 1.5 cm, grated

– 1 tsp cumin

– 1 tsp turmeric

– 1 tsp cinnamon

– 1 tsp cardamom

– 1 can of chickpeas, drained and rinsed

– 5 tomatoes, diced

– 500 grams of sweet potato, diced

– can of coconut milk

“1. Heat some oil in a large frying pan and sauté the onion together with the garlic.”

2. Add the chili and the spices.

3. Finally, add the sweet potato, the tomato, and the chickpeas and let it cook over medium heat.

4. Add the coconut milk and turn the heat low.

5. Let it simmer for at least 50 minutes.

6. Garnish with fresh coriander.

3. Jacked Potato (for 4 people).

– 4 large sweet potatoes

– olive oil

– 1 onion, in fine half moons

– 200 g kidney beans

– 200 g corn

– 3 tomatoes, diced

– 3 tomaten, in blokjes gesneden

– 1 tsp smoked paprika

– 1 red chili, finely chopped

– pinch of salt

– 1 package of feta, crumbled

– handful of spring onion, sliced into rings

– 4 tbsp Greek yogurt

1. Preheat the oven to 200 degrees.

2. Wrap the sweet potatoes in aluminum foil. Prick the packages with a fork.

3. Bake the sweet potatoes for an hour (check after an hour if they are done, otherwise put them back in the oven for a bit).

4. Heat the oil and fry the onion until golden brown.

5. Add the cooked kidney beans along with the corn and diced tomatoes.

6. Add the spices.

7. Let it simmer on low heat for twenty minutes.

8. Remove the sweet potatoes from the oven and cut them open lengthwise.

9. Fill the sweet potato with the bean mixture.

10. Crumble the feta on top and sprinkle with coriander and spring onion.

11. Serve with a spoonful of Greek yogurt.
