4X a HEALTHY HANGOVER BREAKFAST

Dear friends, first of all, all the best for a new fresh year. 2017, bring it on! If you are still working on your New Year's resolutions, read this for a moment. If you are not able to do that right now, then you are in the right place. Did you go completely overboard at a fun party last night? Great, then I hope you still have a stocked fridge, because with these anti-hangover breakfasts, you will feel much better in an hour. Make sure to keep drinking enough (water yes) because that fluid balance needs to be restored first. And uh, avoid the pepper mill or bottle of Sriracha today, because your stomach has to work quite hard to process spicy food. And it has already had a tough time with all those glasses of champagne from last night.

You better make sure this ends up on the table, because these breakfasts are not only too delicious, they will also help you recover.
– Shakshuka with feta and Greek yogurt (2 servings)

Ingredients:

4 eggs

onion

tsp smoked paprika powder

1 red bell pepper, sliced

clove of garlic

Passata

coriander

feta

Greek yogurt

Take a low frying pan. Heat a bit of olive oil and fry the onion together with the garlic and bell pepper until golden brown, add the smoked paprika powder and the passata and let it simmer nicely. Make a few wells in the sauce and crack the eggs into them, making sure the yolk stays intact. Put the lid on the pan and let the eggs cook.

Remove the lid from the pan and crumble the feta over the eggs, sprinkle the coriander over the pan. Serve with a spoonful of Greek yogurt and possibly a thick slice of sourdough toast.

– Ricotta pancakes with banana-maple syrup (4 servings)

250 grams of spelt flour

1 tsp baking powder

tbsp coconut blossom sugar

pinch of salt

2 eggs

400 ml milk

8 tbsp ricotta

syrup

2 overripe bananas

generous splash of maple syrup

2 tbsp melted salted butter

handful of chopped pecans

– Put all the syrup ingredients in the blender and mix until you get a smooth syrup. Set aside.

– Whip the egg whites thick in a medium bowl, in another bowl beat the egg yolk and add the ricotta and milk. Then add all the other ingredients to the egg yolk mixture.

– Heat a frying pan and add a knob of butter to it. Form small pancakes in the pan and let them cook slowly until golden brown.

Serve the pancakes stacked with the banana syrup. Also delicious with a spread of nut butter.

– Scrambled eggs with avocado and smoked salmon (2 servings)

Two slices of sourdough bread

6 eggs

Smoked salmon

ripe avocado

Olive oil

- Fry the eggs in a frying pan.

- Toast a slice of sourdough bread and mash the avocado on the slice of bread. Sprinkle with a bit of coarse sea salt and a drop of good olive oil.

– Serve with the scrambled eggs and smoked salmon.
So then you can start fresh again this afternoon... Just remember that tomorrow is Monday ;)
