Are you looking for an alternative to your breakfast, but can you hardly get your sandwich out the door? Then this morning toast is what you want to have on your breadboard from now on. Well, very simple:
1. Wash the sweet potato.
2. Preheat the oven to 200 degrees.
3. Cut the sweet potato in half lengthwise, about one centimeter thick.
4. Spread the slices with a bit of coconut oil and sprinkle them with a pinch of sea salt.
5. Bake the sweet potato slices for 15 to 20 minutes, turn them over and bake the other side for another 15 to 20 minutes. Check in between to see if the slices are not getting too soft and soggy.
6. Remove the baking dish from the oven and let the slices cool slightly.
Top your sweet potato toast with:
1. Nut butter, apple slices and cinnamon.
2. Greek yogurt, banana slices, and grated coconut.
3. Peanut butter, banana slices, shaved dark chocolate, and a pinch of sea salt.
4. Smashed avocado, a soft-boiled egg, and sesame seeds.
5. Cannellini beans marinated in fresh pesto with thin slices of cucumber.
6. Smashed avocado, sun-dried tomatoes, and cress.
7. Pea puree, feta, and coriander.
8. Cottage cheese, chicken breast, and a dab of sambal.
9. Greek yogurt, smoked salmon, and fresh parsley.
