AVOCADO PANCAKES

Do you ever find a stray overripe avocado at the bottom of the fruit bowl? No, me neither. I mean: avocados for life. Still, if I were you, I would throw a few extra avocados in your basket from now on, because you can freeze avocados very well. Remove the avocado from the skin, pit it, and cut it into cubes. This way, you'll always have avocado on hand for your smoothie, an insanely good homemade guacamole, or a perfectly baked banana bread.

Yesss dear friends, here we are again. Baking on Sunday with Simone. Today: what's a Sunday without pancakes?

For two people:
400 ml buttermilk

2 eggs

1 tbsp maple syrup

1 tbsp melted coconut oil

1 tsp vanilla extract
1. Put all the ingredients in the blender and blend until you get a smooth mixture.
1 avocado

130 grams spelt

70 grams buckwheat flour

1/2 tsp salt

1.5 tsp baking powder

1. Add the above ingredients to the mixture and mix until all ingredients are combined.

2. Heat some coconut oil in a frying pan and make small pancakes.

3. Serve them with a spoon of Greek yogurt, grated apple, maple syrup, and cinnamon.
