Fries from forgotten vegetables
Actually, I don't know why there are still of vegetables forgotten vegetables. Parsnip, sunchoke, kohlrabi or palm cabbage; all examples of vitamin bombs that are not quickly thrown into our shopping cart. It's a real shame, because you can make the tastiest dishes with them and you don't have to spend hours in the kitchen. In fact, it's the best alternative to fries. Much healthier than those from the chip shop on the corner, because you simply make them in your Airfryer XXL, which gives them an optimal crispy bite.
What do you need?
- 1 parsnip
- 1 parsley root
- piece of celeriac
- fresh thyme
- olive oil
- coarse sea salt
For the mayo
- 1 tbsp mustard
- olive oil
- lemon
- maple syrup
- 1 clove of garlic
Here’s how to make it
1. Peel the vegetables and cut them into fries. Meanwhile, preheat the Airfryer to 180 degrees.
2. Mix the vegetables with a tablespoon of olive oil and the thyme. Place them in the basket.
3. Bake the fries until crispy for twenty minutes.
4. Put all the ingredients for the mayonnaise except the olive oil in a bowl.
5. Whip the mayonnaise with an immersion blender or a whisk until stiff, while slowly pouring in the olive oil.
6. Serve the fries with some coarse sea salt and the homemade mayo.
