HEALTHY APPLE CRUMBLE
Team Apple Pie is a household name in the editorial office. Our Theo can easily handle three pieces from The Cake Room in a row without any shame. And as soon as the doorbell rings (which happens about a thousand times a day), there is a massive shout of ‘APPLE PIE!’ That doorbell always means the postman (the poor man). Very disappointing, because that apple pie has never been delivered. I don't know why we keep shouting it, but oh well, it sounds so cozy. And now the question: who feels called to bring us WARM apple pie?
Well, since it can't be a party every day but I want apple pie every day, I went looking for a good alternative. If I feel like something tasty on the weekend and I have apples (or pears) at home, I make myself a warm crumble.
Apple crumble with cream (for two people)
Ingredients:
2 ovenproof dishes
2 apples, chopped
1 tsp cinnamon
1 tsp cardamom
2 heaping tablespoons of cold butter
50 grams of spelt flour
50 grams of oat flour
2 heaping tablespoons of (coconut blossom) sugar
And for the whipped cream lovers:
– Let a handful of raw cashews soak for a few hours (preferably overnight) in water.
– Put the nuts in the blender, along with the seeds of a vanilla pod and a tablespoon of maple syrup.
– Blend until you get a creamy consistency.
Preheat the oven to 180 degrees.
1. Mix the pear with the cinnamon and cardamom in a bowl.
2. Divide the pear between the two ovenproof dishes.
3. Put the cold butter, flour, and sugar in a mixer and let it run until crumbs form.
4. Don't do this too long, or the butter will melt and form one big dough ball. Don't have a mixer? You can easily make the crumbs with a knife and fork. Just put the ingredients in a bowl and cut the butter into the flour and sugar. You can also use your fingers to create crumbs.
5. Divide half of the crumbs over the bottom of the ovenproof dishes, then add the pear on top and finish with the remaining crumbs.
6. Bake the crumble for 20 minutes.
7. Serve warm and optionally with a spoonful of cashew cream.
