No matter how healthy I live, I also have my guilty pleasures. And one of those guilty pleasures is pizza! All day everyday. Well, homemade of course, without help from Mr. Oetker, I am that spoiled. My mother used to make fresh pizzas for us. We could then top them with whatever we liked. While my brothers went to work as carnivores with salami, Parma ham, and other meats, I topped my plate with all kinds of cheeses I could find.
I keep that tradition alive and when I feel like comfort food on the weekend, I dive into the kitchen and dust it with flour and tomato sauce. I fill my masterpiece with a shitload of vegetables, but keep it calm with the cheese. Then I can have a big glass of red wine with it. Is it already the weekend?
Sweet potato pizza crust
2 roasted sweet potatoes without skin
1/2 tsp dry yeast
60 ml lukewarm water
250 grams of spelt flour
pinch of salt
2 tbsp olive oil
1. Put the sweet potato, water, and yeast in a large bowl.
2. Let it sit for a moment and then mix all the ingredients together.
3. Add the remaining ingredients and mix until a firm ball of dough forms.
4. Wrap the dough in plastic wrap and place it in the refrigerator for an hour.
Pizza sauce
1 kilo of vine tomatoes
2 red bell peppers
1 thick onion
3 cloves of garlic
basil
fresh thyme
smoked paprika powder
salt and pepper
1. Preheat the oven to 180 degrees.
2. Place all ingredients except the fresh basil in a baking dish.
3. Roast the vegetables for 45 minutes.
4. Put the contents of the baking dish in a blender and blend until you have a smooth sauce.
5. Finely chop the fresh basil and add it to the sauce.
Toppings
grilled vegetables (green asparagus, eggplant, zucchini, bell pepper, artichoke)
fresh leaf spinach
soft goat cheese
Preparation method for pizza
1. Roll out the dough to about 2 centimeters thick and place it on a large baking sheet.
2. Spread the sauce over the dough.
3. Top your pizza with grilled vegetables of your choice and possibly the fresh spinach.
4. You can also put the fresh goat cheese (I use goat cheese with honey) in the oven, but adding it later is also an option.
5. Bake the pizza until done in about 35 minutes.
6. Serve with arugula and possibly fresh Parmesan.
