Simone's fresh strawberry soup

Last week I told you how addicted I am to soups. Did you miss that? Make sure to put some effort into these summer soups, they are heavenly. But did you also know that you can completely change your dinner and instead of starting with a soup, you can end with a soup? Soup yes. From fruit. With the help of the Philips Avance Collection blender making this strawberry soup is a piece of cake.
All you have to do is fill the jug with all the ingredients and within a minute you have a delicious dessert ready. Make a double portion, because this soup is the perfect base for your breakfast smoothie. The next day, add a cooked beetroot and a banana, blend it again and voilà: a delicious smoothie bowl.

Fresh strawberry soup

  • 2 containers of strawberries
  • Juice of 3 oranges
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • Half a can of coconut milk
  • 1/2 tbsp vanilla extract
  • Coconut flakes
  • A few leaves of fresh mint
  • 150 ml Greek yogurt
  1. Put all the ingredients in a blender and mix until you get a smooth soup.
  2. Divide the soup into nice bowls.
  3. Garnish with coconut flakes and mint leaves.
  4. Place a spoonful of Greek yogurt in the center of the soup.
