You don't need to take a plane for this Swedish delicacy, I have the ultimate recipe for you. And even you, with two left hands, can make it. The preparation is not difficult, it just takes some time. But believe me, once these kanelbulle are in the oven, you just know it was worth the wait. These rolls are heaven.

For 24 small rolls (a small batch)

  1. Warm the milk. Take a cup of the warm milk aside and dissolve the yeast in it.
  2. Add 1 tablespoon of flour to the yeast mixture, stir well, and let it sit in a warm place for 15 minutes.
  3. Melt the butter in the remaining milk and let the milk cool until it is lukewarm.
  4. Open the cardamom pods and crush the seeds in a mortar into a fine powder.
  5. Mix the flour with the egg, salt, sugar, and cardamom. Add the milk, take the dough out of the bowl, and knead it with your hands on the – lightly floured – countertop until it is a smooth dough.
  6. If the dough is sticky, sprinkle some flour on it and continue kneading.
  7. Put the dough back in the bowl and cover it with a damp tea towel.
  8. Let it sit for an hour in a warm place until the dough has doubled in volume.
  9. Melt the butter and mix the sugar with the cinnamon.
  10. Knead the dough briefly and divide it into two equal pieces. Roll each piece out into a rectangle about 5 millimeters thick.
  11. Spread both rectangles generously with butter and sprinkle them with the cinnamon sugar.
  12. Roll them up from the long side and then cut them into slices of about 3 centimeters with a sharp knife.
  13. Line two baking sheets with parchment paper and place the rolls on them.
  14. Leave some space between the rolls and gently press them down a bit with your hand.
  15. Cover again with a towel and let rise for a second time.
  16. Preheat the oven to 220 degrees.
  17. Brush the tops with the beaten egg and sprinkle the rolls with the pearl sugar.
  18. Bake the rolls for about minutes in the preheated oven and then let them cool on a rack.
