Taco Tuesday
It's Tuesday again, girlfriends, so it's time for tacos. Taco Tuesday has become a real concept here at the editorial office. Soon you can plop down for your late-night snack at the first location of Taco Bell , but the tastiest tacos are the ones you make yourself. Here I already gave you a recipe for the tastiest original tacos. Today we're taking it a step further. These fish tacos are to die for. Make a double portion right away, because the filling might be even tastier the next day.
Fish tacos (for two people)
250-300 grams of white fish (like wolf fish)
1 tsp smoked paprika powder
1 tsp cayenne pepper
pinch of salt
1/2 lime
2 ripe tomatoes
1/2 red onion, finely chopped
1/2 red chili pepper
1 avocado
a handful of fresh coriander
1/2 cucumber
3 tbsp white wine vinegar
2 tsp honey
1 clove of garlic, finely chopped
soft tortillas
- Cut the fish into pieces and add the spices.
- Slice the cucumber into thin slices and add the vinegar, honey, a pinch of salt, and the garlic. Set it aside for a moment.
- Heat some olive oil in a pan and cook the fish over medium heat until done.
- Meanwhile, cut the tomatoes and avocado into pieces. Combine everything with the onion.
- Warm the tortillas over low heat.
- Fill the tortillas with the fish, salsa, and cilantro, and drizzle them with fresh lime juice.
- Serve the sweet and sour cucumber on the side.
