THE AVOCADO VIRUS
‘Simoon, hold on, an avocado restaurant is coming to Amsterdam.’ Say whut? That one sentence changed my life. Because I have the avocado virus and it’s never going away. I want it. On everything. In everything. Between everything. And next to everything.
Do you want to go a bit further than that smashed avo on toast or that delicious guacamole dip with your nachos? Let me wave my magic wand. Avocado makes everything tasty.
1. Banana Cake
I often use applesauce as an alternative to butter or oil. But avocado is also the perfect substitute. I found this recipe yesterday and immediately dove into the kitchen. Super delicious.
Ingredients:
– 100 grams coconut blossom sugar
– generous spoonful of nut butter
– two ripe avocados
– two overripe bananas (as black as possible)
– 2 eggs
– 100 ml almond milk
– 1 tsp vinegar
– 1 tsp baking powder
– 250 grams spelt flour
Preparation:
1. Preheat the oven to 180 degrees.
2. Mix all the dry ingredients in a large bowl.
3. Mash the avocados and bananas in another bowl. Whisk the eggs and add them along with the other wet ingredients to the avocado mixture.
4. Combine the dry ingredients with the wet ingredients.
5. Grease a baking pan with oil and pour the cake batter into the mold.
6. Bake the cake for 45 minutes until done.
2. Salad Dressing
Have you seen my skinny dressings yet? That’s where my new favorite is. With avocado. The absolute best over a salad with smoked salmon or Norwegian shrimp.
3. Stuffed Eggs
Looking for a healthy and protein-rich snack? Try these old-school stuffed eggs. Super easy to make and super tasty #nomnomnom.
Ingredients:
– 6 hard-boiled eggs
– 1 avocado
– handful of finely chopped spring onion
– 1 tbsp fresh chopped parsley
– pinch of nutmeg
– pinch of turmeric
– 1 tbsp Greek yogurt
– 2 tsp lemon juice
– freshly ground pepper and sea salt
– paprika powder
Preparation:
Boil the eggs, cut them in half and remove the yolk. Take a large bowl, mash the avocados with a fork and add the yolks. Add all the other ingredients to the avocado and stir until you have a nice smooth mixture. Fill the egg whites with the avocado mixture and top with a bit of paprika powder and fresh parsley.

4. Breakfast Smoothie
Make your smoothie creamy by adding half an avocado. Super tasty and you immediately get your portion of fats to start your day right.
Ingredients:
– half an avocado
– 1 banana
– 1 orange
– 200 ml almond milk
– 100 ml low-fat quark
Put all the ingredients in the blender.
5. Dessert (for two people)
Healthy chocolate mousse? Say whaaaaat? Yes, it’s possible. And it’s easy to make too.
Ingredients:
- 1 avocado
– 1 ripe banana
– 2 medjool dates
– 200 ml ‘creamy’ coconut milk (from a can)
– 30 grams (raw) cocoa powder
Everything in the blender, pulse pulse and voila, that bowl with a spoon.
6. Pasta (for two people)
Yehesss, if this isn't delicious pasta then I don't know anymore. Are you tired of your bolognese sauce? No more desire for your carbonara and is the truffle coming out of your nose? Ha, just kidding about that truffle. But with this pasta, you will definitely score points with your guests.
Ingredients:
– 150 grams spelt pasta
– 300 grams leaf spinach
– 1 ripe avocado
– 75 grams full-fat Greek yogurt
– a handful of fresh basil
– Parmesan cheese
– 2 cloves of freshly chopped garlic
– pepper and salt
Preparation:
1. Cook the pasta al dente.
2. Stir-fry your spinach and let it cool.
3. Put all the other ingredients except the Parmesan in the blender and mix until you get a creamy sauce.
4. Drain the pasta and put it in a frying pan.
5. Add the sauce and warm the pasta up a bit.
6. Serve with the Parmesan cheese and fresh black pepper.
