The most delicious pancakes
Good morning lovely girls, it's Sunday again and that means a nice long time under the covers with a good breakfast. Because breakfast is a celebration and breakfast in bed on Sunday morning is double the celebration. I love to start my Sunday with fluffy pancakes dripping with maple syrup and under a blanket of blueberries. Whose turn is it today? Yours? Or your sweetheart? Enjoy!
Fluffy pancakes with blueberries
- 110 grams self-raising flour
- 1 tsp baking powder
- 75 grams of fine granulated sugar
- 180 ml buttermilk
- 2 eggs, separated into whites and yolks
- 240 grams fresh ricotta
- a container of blueberries
- 1 lemon
- maple syrup
1. Whip the ricotta until creamy and set aside.
2. In a large bowl, combine the flour, baking powder, sugar, buttermilk, and egg yolks and mix until smooth.
3. Beat the egg whites with a mixer until stiff white peaks form.
4. Gently fold the ricotta into the batter and then slowly fold in the egg whites.
5. Heat a frying pan over medium heat and add a knob of butter.
6. Add full spoons of batter to the pan and cook the pancakes until golden brown.
7. Crush the blueberries.
8. Serve the pancakes with the blueberries and drizzle with maple syrup and a bit of lemon juice.
