A animal-friendly hooray today on World Vegan Day. Where a year ago you were quite a woolly sock if you didn't put anything from the cow, pig, or chicken in your mouth, nowadays it's the most normal thing in the world to eat plant-based.

Time for a lesson in veganism, because what does vegan food actually mean?

  • Vegans do not eat animals and use nothing that comes from an animal or that has been tested on an animal.
  • So real vegans also have nothing made of fur, leather, down, wool, suede, and silk in their closet
    Digging into a tasty bag of wine gums? Not if you're vegan.
  • Nowadays there are even vegan snack bars where you can go for a vegan kapsalon, burger, or fries with mayo.
  • We eat more meat than ever these days. By 2040, meat consumption will have doubled if we continue like this.
  • Yet in the past year, our friends at Deliveroo ordered a whopping 531% more vegan than the year before.
  • Snack giant McDonald's has even developed a special McVegan this year.
  • As a vegan, can't eat chocolate? Certainly, the golden wrappers of our great hero Tony's Chocolonely are 100% animal-friendly.
  • And all the colorful bags of Katja are completely vegan.
  • Oreo's? Vegan!
  • At the editorial office, we are addicted to the lime-meringue pie. Crispy on the outside and soft on the inside with a creamy and tangy lemon curd and cookie base. But yes, anything but animal-friendly, that deliciousness. And yet you can make meringues (you know, those gigantic delights that you find on every corner of the street in Paris) vegan friendly in no time. So.

Vegan meringues

can (400 gr) chickpeas

1/4 teaspoon cream of tartar

sugar

1/2 teaspoon vanilla extract

  • Preheat the oven to 100°C. Line a baking sheet with parchment paper.
  • Drain the chickpeas and catch the liquid. Use the chickpeas, for example, in a homemade hummus.
  • Put 125 ml of the liquid in a bowl and add cream of tartar. Whip with a mixer until the mixture forms soft peaks.
  • Gradually add the sugar and continue to whip until the mixture is stiff and glossy. This may take a while.
  • Add the vanilla extract and mix. Spoon the mixture into a piping bag and pipe small circles onto the baking sheet, about 3 cm in diameter.
  • Bake for 90 minutes in the preheated oven, until they are firm and easy to remove from the parchment paper. Remove them from the oven and let them cool completely.
