The editorial cookie
You all know by now that we are spoiled here at the editorial office daily with packages filled with the latest wrappers from Tony or tompouce Easter eggs from HEMA. And if nothing is delivered, someone is having a birthday. Then you still have a handful of days left, and I am responsible for that. At first, I rolled granola balls from dates and oat flakes, but the snack team often prefers something with butter, sugar, and/or chocolate added. As a result, I now set my principles aside and, in the evening, before diving into bed, I slide a cake into the oven or fire up the waffle iron.
When I asked Lil this week at the end of the afternoon (snack time, of course) what I should roll up my sleeves for that evening, she immediately shouted, without a doubt: “peanut butter cookies, of course.” So it worked out perfectly, because my pantry had become one big jar of peanut butter (something to do with an intense addiction to the fine nut). So said, so done. And when you walk into the building the next morning with twenty cookies and leave the building after six with an empty tin, you know it’s a hit. You better turn on the oven NOW and start baking. The cookies will be on the table, I mean in bed, within half an hour. Coffee on the left, your love on the right, and cookies for breakfast. Happy Sunday!
For 10 large cookies
- 125 grams flour
- 115 grams of soft butter
- 3 heaping tablespoons of smooth peanut butter
- 150 grams granulated sugar
- 50 grams of brown sugar
- 1 egg
- 1 tsp baking powder
- pinch of cinnamon
- pinch of salt
1. Preheat the oven to 175 degrees.
2. In a large bowl, mix the butter with the peanut butter, granulated sugar, and brown sugar. Use a mixer or your hands for this.
3. Add 1 egg, a pinch of salt, and the cinnamon, and mix briefly. Add the flour and baking powder and mix briefly again.
4. Line a baking sheet with parchment paper and make small heaps of dough with a spoon. Make sure to leave enough space between the cookies.
5. Bake the cookies for fifteen minutes until done.
Tip: Chop some chocolate from your favorite (this for example) and mix it into the batter. Chocolate chip peanut butter cookies, just sayin....
