De avo poke show, ‘Avocadobowl’
Waka-waka-me-me, I am addicted. When I eat a poke bowl, I eat wakame. I always click ‘extra wakame’. And that's where I get caught, because I've never made that poke bowl myself, until now. With this recipe from The Avocado Show, you'll never eat it any other way.
What you need:
50 g sushi rice
about 50 g salmon, of sashimi quality
½ avocado
2 tbsp edamame beans
2 tbsp tobiko fish roe
2 tbsp wakame (seaweed salad)
1 tbsp furikake/edamame beans
edible flowers in a contrasting color
daikon cress
soy sauce, to serve
For the salmon marinade:
½ tsp sushi vinegar
½ tsp soy sauce
1 tsp sesame oil
1 tsp olive oil chili flakes, to taste
- Cook the sushi rice according to the instructions on the package.
- Mix all the ingredients for the salmon marinade, cut the salmon into small cubes and add them to the marinade.
- Make an avocado crown (see page 138). Fill the avocado crown, or the bowl, with sushi rice. Press the rice down with the (wet) back of a spoon.
- On top goes a layer in quarters: ¼ salmon, ¼ edamame beans, ¼ tobiko fish roe, and ¼ wakame. Sprinkle furikake over the salmon and distribute the flowers over the edamame. Place the cress in the center of the poke bowl and serve with soy sauce.
