Where in my student days you would find nothing but a bottle of overly sweet syrupy balsamic in my kitchen cupboard nowadays there are a dozen bottles on the shelf. Because the one that goes over the tomato salad is not suitable for the, rice. And that fruit salad on a warm summer day cries out for a splash of the champagne variant. Can't get beyond a bottle of vinegar and could use some knowledge? These are the different types of at the office? That’s a whole different story. Sharp and fruity in taste. Perfect for dressings and as a base for your marinade for a piece of chicken.
Champagne vinegar.
This vinegar is made from yes champagne and works well with all kinds of salads. It also pairs perfectly with fruit salads or in a sweet sauce. My favorite you can just buy at Oil & Vinegar. Just be warned, you will get addicted to this refreshing sweetness.
Sherry.
This vinegar has a strong flavor and is ideal for vinaigrettes, soups, and sauces.
Wine vinegar.
Both red and white wine vinegar are made in different varieties, with the red having a somewhat stronger and more robust flavor, and the white being fresh and mild. Both give your homemade tomato sauce a finishing touch and they remove the bitter aftertaste from your Brussels sprouts or grilled pointed cabbage. Three guesses what my favorite is… That's right, the Chardonnay vinegar from Dille & Kamille.
Herb vinegar.
You can also make this vinegar yourself and it is perfect for salads, sauces, and as a finishing touch on a piece of grilled meat. My ultimate favorite? Tarragon vinegar. What do you need for this? A bottle of white wine vinegar, some sprigs of fresh tarragon, and a little patience…
Balsamic vinegar
This originally Italian vinegar is and remains the king among vinegars and is therefore one of the most popular types. From young to old and from thin to the creamy variant. Use this king in dressings, dips, marinades, and sauces or as a topping over salads or perfectly cooked steak.
Rice vinegar.
The ingredient that gives your sushi flavor. But not only for your favorite Japanese snack do you use this sweet and mild vinegar. Drizzle salads, stir-fry dishes, or cooked vegetables with it for a fresh touch.
Malt vinegar.
In the Netherlands, we don't come across the bottle very often, our British neighbors, on the other hand, use this vinegar a lot and preferably as often as possible. This vinegar is used for pickling vegetables or over fish & chips.
