The ultimate toast for your cocktail

You can enjoy the toast without the cocktail or the cocktail without the toast, but if we are to believe our source, those two together are an ultimate combination. Since we are fans of toasts and cocktails, we will definitely try these two together.

Bloody Mary is one of the few savory cocktails – and certainly the most famous. Because it’s so easy to make: sure, but above all because Bloody Mary is very, very tasty and you can eat fantastically with it. In the US, it’s even brunch cocktail number one.

Ingredients

For the toast

8 slices of sturdy (sourdough) bread

400 grams of Camembert, without rind

For the oven-dried tomatoes

4 large tomatoes, sliced into 1.5 cm thick slices

1 tsp sugar

pinch of salt

1 tbsp olive oil

For the basil pesto

2 basil plants, just the leaves

35 grams of Parmesan cheese, grated

45 grams of roasted pine nuts

85 ml olive oil

salt and pepper

So fix that Bloody Mary and brace yourself for perhaps the tastiest toast you’ve had in a while. It comes with Camembert, oven-dried tomatoes, and fresh basil pesto.

Tip: Spread the toast with some mayonnaise. This gives the toast a nice color and makes it even creamier and crispier in flavor.

Preparation

Preheat the oven to 130 degrees. Cut the tomatoes into thick slices and place them on a baking sheet lined with parchment paper. Sprinkle the salt, sugar, and olive oil over the tomatoes and roast them for two hours.

After two hours, remove the tomatoes from the oven and let them cool.
Make the pesto by putting the basil, cheese, pine nuts, olive oil, and pepper in a blender or food processor. Taste and add extra salt to taste.

Now make the toast and spread one side of the slice of bread with mayonnaise (this will be the outside of the toast later). Spread the other side with pesto, enough cheese, and finish with some pesto and 2 to 3 slices of tomato. Place the other slice of bread on the toast and also spread this side with mayonnaise. Fry the toasts in a pan until both sides of the bread are nicely golden brown and the cheese is melted. Remove the toasts from the pan and serve immediately.
