Cooking with Kiek in Quarantine: banana bread

Sometimes I have those panic baking days. Then I wake up, jump out of bed, and at 07:32 I’m throwing a banana bread in the oven. Nothing better than a cup of coffee and a slice of banana bread for breakfast. It only takes ten minutes to prepare, 45 minutes in the oven, and you’ll be very satisfied with yourself for about four days, knowing you have your life together – HAHA.
So today I present to you: the healthy variant that I discovered. Is a (excusez le mot) fucking delicious banana bread without sugar possible? Absolutely, girlfriend. You know what? I’ll film it for you. Here you go!
Ingredients?
– 4 ripe bananas (actually the more rotten, the better)
– 3 eggs
– 170 g fine oats (I blended it a bit, then it became a kind of oat flour, but if you like it coarse, that’s not necessary)
– shitload of cinnamon because chill
– half a packet of baking powder
– 50 grams of white raisins
– 50 grams of cacao nibs
