Forget the caprese: this is the tastiest salad with mozzarella

“This is more of a composition than a recipe – it is summer cooking at its simplest. Since the success of this dish depends on the quality of the ingredients, you should wait until the peaches are perfectly ripe and sweet. I prefer buffalo mozzarella from Campania, the fresher the better, but this would also be nice with fresh ricotta. You can also use nectarines instead of peaches.”
Ingredients
4 balls of buffalo mozzarella of 125 g each
2 peaches (the best you can find)
olive oil
lemon juice
sea salt and freshly ground black pepper
12 leaves of basil
4 slices of smoked ham (preferably prosciutto)
How to make mozzarella with peach and ham
- Tear the mozzarella into pieces with your hands and distribute it over a large plate or a large serving dish.
- Halve and pit the peaches and cut each peach into sixths or thick slices. Lightly drizzle the peaches with some olive oil and just enough lemon juice to balance the sweetness of the peaches. Season with salt and black pepper.
- Gently mix the basil with the prepared peaches and place with the mozzarella. Drizzle the cheese with your best olive oil. Finally, elegantly drape the ham over it.
